These Apple Spice Muffins have become a favorite! I love finding little bites of fresh apple in every bite, along with the cozy cinnamon flavor and just the right amount of sweetness.

They're perfect for a quick breakfast paired with a protein latte or an afternoon snack with a cold glass of milk. I love having something delicious on hand that tastes like a treat while adding a little extra nutrition to my day!

Made with ground flaxseed, Greek vanilla yogurt, eggs, and fresh apples, these muffins offer a delicious combination of fiber, protein, and classic fall flavor.

Why You'll Love These Apple Spice Muffins

  • A little extra fiber: Ground flaxseed adds fiber and healthy fats to these sweet mini loaves.
  • Classic fall flavors: Fresh apple and cinnamon make every bite taste like fall.
  • Simple ingredients: You probably have many of these pantry staples in your kitchen already.
  • Versatile: Enjoy one for breakfast with chicken sausage or save one for your afternoon snack.
  • Easy to make ahead: Bake a batch and keep them ready for busy mornings or when you need something quick to eat.

Ingredients for Apple Spice Muffins

Here's what you'll need to make these easy apple cinnamon mini loaves.

  • Flour: Use all-purpose flour or oat flour for a gluten-free option. If you need the recipe to be gluten-free, make sure your oat flour is certified gluten-free.
  • Ground flaxseed: This is one of my favorite ways to add fiber to baked goods without making a recipe complicated.
  • Cinnamon or apple pie spice: Use cinnamon for a classic flavor or combine cinnamon and apple pie seasoning for an extra cozy taste.
  • Fresh apple: Adds natural sweetness, flavor, and texture. Chop the apple into small pieces so it distributes evenly throughout the batter.
  • Vanilla Greek yogurt: Adds moisture and a little extra protein.
  • Eggs: Help bind the ingredients together.
  • Avocado oil: Adds richness and helps keep the loaves moist.

How to Enjoy Apple Spice Muffins

One of my favorite things about these muffin is how easy they are to fit into different meals and snacks.

For breakfast: Pair a muffin with chicken sausage patties for a combination of sweet and savory flavors. Adding a protein source alongside your baked goods is an easy way to build a more satisfying breakfast.

For an afternoon snack: Enjoy a muffin with coffee, tea, or a glass of milk. It's a great option when you're craving something sweet and want a homemade treat.

For meal prep: Bake a batch over the weekend so you have something ready to grab during the week. Pair with yogurt, eggs, or another protein source when you want a more filling breakfast.

I always like to think about how I can add more nutrition to the foods I enjoy. You don't have to give up sweet foods to eat well. Sometimes it's as simple as pairing your favorite baked good with a source of protein or adding ingredients like flaxseed to a recipe.

Tips for the Best Apple Spice Mini Loaves

  • Chop the apple small. Smaller pieces distribute more evenly and help the loaves bake consistently.
  • Don't overmix. Stir just until the ingredients come together for a tender texture.
  • Customize the spices. Cinnamon is delicious on its own, but apple pie seasoning adds extra warmth.
  • Check for doneness. Ovens and pans vary, so use a toothpick to check the center before removing the loaves.
  • Make a batch ahead. Store cooled loaves in an airtight container in the refrigerator for several days, or freeze them for longer storage. Thaw in the refrigerator or warm gently before eating.

Frequently Asked Questions

Can I use oat flour instead of all-purpose flour?

Yes! Oat flour is an option for this recipe. The texture and moisture absorption may vary depending on the flour, so check the loaves for doneness and allow them to cool before judging the final texture. Use certified gluten-free oat flour if you need a gluten-free recipe.

Are Apple Spice Muffins a healthy breakfast?

They can be part of a balanced breakfast! The ground flaxseed contributes fiber and healthy fats, while the Greek yogurt and eggs provide protein. I like pairing a mini loaf with chicken sausage, eggs, or yogurt to make breakfast more satisfying.

How should I store the muffins?

Once completely cooled, store them in an airtight container in the refrigerator for several days. You can also freeze them individually so they're easy to grab when you need a quick breakfast or snack.
