This satisfying little dish is a the perfect summer, no-cook side or even make it the main dish. Let me explain . . . OH. MY. GOODNESS!
On a plate, I layered it with tortilla chips then added a nice sprinkle of shredded cheese, popped it in the microwave for a bit and then piled on this Edamame Pepper Salsa!
Lunch is done! It is a nice change from a typical salad and very filling.
In a bowl, combine all ingredients. Feel free to add cilantro, beans, corn, or whatever you enjoy. Let salsa set in the refrigerator for 30-minutes for flavors to pop!
