Edamame & Pepper Salsa

I think I could eat chips and salsa/dip for every meal, oh wait, I pretty much do that already, ha!  

This simple, fiber-filling salsa is great to enjoy with chips or top on a salad.  This week I am highlighting peppers.

Peppers rank as one of the highest antioxidant-rich foods. Peppers help fight against aging, certain cancers, and extremely beneficial for the heart.

 

This satisfying little dish is a the perfect summer, no-cook side or even make it the main dish.  Let me explain . . . OH. MY. GOODNESS!  

 

On a plate, I layered it with tortilla chips then added a nice sprinkle of shredded cheese, popped it in the microwave for a bit and then piled on this Edamame Pepper Salsa!  


Lunch is done! It is a nice change from a typical salad and very filling.

Edamame & Pepper Salsa

Ingredients
  

  • 1 cup chopped peppers
  • 1 cup shelled edamame
  • 1/2 cup green onions
  • 1 tbsp. fajita seasoning
  • 1 tbsp. lime juice

Instructions
 

  • In a bowl, combine all ingredients. Feel free to add cilantro, beans, corn, or whatever you enjoy. Let salsa set in the refrigerator for 30-minutes for flavors to pop!
