Oh, my goodness! If you have a sweet tooth, these little bites are a must! This recipe mimics a no-bake cookie, but no need to dirty a pot on the stove. This recipe is very simple with a few ingredients.
I am in love with these bites because they are the perfect addition to a mini breakfast, snack, or dessert! I paired a bite with my latte in the morning before I went to work out and it just the right amount of fuel to start the day.
Ingredients you need
I have made many different versions of energy bites, and this recipe is one of the most minimalist combinations.
- OATS: A great source of fiber! I usually use quick oats, but this time I used sprouted oats I bought at Costco. I enjoyed the size of oat flake as it gave the energy bite a little crunch after storing them in the refrigerator. I talk more about the benefits of sprouted grains below.
- COCOA: Cocoa powder is a rich source of polyphenols which are naturally occurring antioxidants in foods that come from plants. In the recipe, I have noted the amount of cocoa to be a 1/4 to 1/3 cup. In the recipe shown in the video, I added 1/3 cup (it tends to be a little darker in color). I enjoyed the robust chocolate flavor by adding 1/3 of cup. If you tend to like a lighter flavor of chocolate, start with 1/4 cup of cocoa.
- PEANUT BUTTER: Adding healthy fats and flavor to this recipe with natural peanut butter. Peanut butter is the glue to hold the ingredients together.
- AGAVE NECTAR: I used agave nectar because I like the flavor, consistency, and that is what I had in my pantry. You can substitute with honey or pure maple syrup. Only a small amount (1/4 cup) is needed to slightly sweeten this recipe.
- CHOCOLATE CHIPS: Usually, I have mini chocolate chips on hand, but I only had regular chocolate chips and that works, too! The chocolate chips are a wonderful addition to this recipe as they remind me of me of the beloved no-bake cookies we had at school lunch.
Here are the sprouted oats I bought at Costco.
What are sprouted grains?
Sprouted grains are made from seeds that started to sprout, whereas traditional bread and flour are simply made of ground seeds.
This product is gluten free and organic with six grams of fiber and 7 grams of protein per serving (1/2 cup).
Many health benefit for sprouted grains
Sprouted grains have a variety of health benefits, including increased number of antioxidants, easier to digest, and even more fiber (which really excites me!).
Multiple research studies have shown many health benefits for sprouted grains.
How to store the energy bites
To extend their shelf life and make sure the ingredients stay together and fresh, I like to store them in the refrigerator or freezer.
My kids love them as much as I do and satisfy our sweet tooth for a snack or after dinner!
Loving these bites!
My daughter was featured on my podcast discussing our Kids Make! videos and bringing back some of our favorite family recipes.
She sums it up by saying they are the best to satisfying that “I need something sweet” after a meal. Honestly, I didn’t tell her to say that but my hear melted a bit because I agree with her a 1000%
