Enjoy this simple, delectable recipe that could even be a complete meal.  It is simple to make and packed with good-for-you foods.  Perfect for a side dish on taco night or eat the leftover for lunch! 

Did you know most Americans do not get the recommended amount of fiber each day?! They only get about 10 to 12 grams of fiber each day which is half or less than the recommended amount (25 to 30 grams/day). 

So, my point is . . . this recipe is a great fiber boost packed with beans and veggies.  If you are timid to try this many beans, an extra rinse may help or try Beano before you consume this dip.  Yes, it may take some time for your body to get used to more fiber but it is really beneficial for the body. Start out with a 1/4 cup serving and go from there for your body to adjust. 

Beans – Are good sources of iron, fiber, protein, B vitamins and many more boosting antioxidants.  The benefits are numerous from lowering cholesterol to increasing gut health to lowering blood sugar and so many more! 

Mini Sweet Peppers – These sweet little peppers are colorful and packed with nutrients especially vitamin A, C, potassium, folic acid and fiber.  They are fun to eat fresh or chop in a salad.  They are the star of this recipe and bring vibrant, rich, nutritious colors to this dish. 

Cilantro – Yes, even herbs are loaded with some of the most beneficial nutrients.  Cilantro can be optional in this recipe but if you like the flavor, you will love the fresh flavor it brings to this recipe. Cilantro has been touted for its anti-inflammation properties to help the body fight disease and aging.

You are welcome to make your own vinaigrette or use this product.  Newman’s Own dressing is much lower in sodium than many other dressings I have seen on the shelves (which is why I picked it out to try).  Plus, it is a great marinade or dressing for any salad.

Simple Cowboy Caviar

This could be a meal, snack or appetizer. It is filling, simple and quite addictingly delicious! Plus, it is packed with good-for-you foods.


  • 6 mini sweet peppers, chopped
  • 1 can (15-oz) black beans, drained and rinsed
  • 1 can (15-oz) black-eyed peas, drained and rinsed
  • 1/3 cup Newman's Own Classic Oil & Vinegar
  • 1/4 cup red onion, chopped
  • 1/4 cup cilantro, chopped


  • In a bowl, combine peppers, beans, onions and cilantro together. Add dressing over ingredients and mix well. Refrigerate for at least 30 minutes. Enjoy!

I seem to be the biggest fan of this recipe in my house but that is okay, I will have it along with tacos and for lunch –  it’s is just so darn good!  I hope you enjoy!  Rinse, dump, chop and eat!
