Well, these little bites are growing on me. With few ingredients, they sure satisfy a sweet tooth and go perfect with cup of coffee. They kind of remind me of a cinnamon roll combined with a maple nutty donut… Maybe 🤷🏻♀️😂. But one thing for sure, they are delicious!
Here’s the recipe:
Ingredients
1 cup nuts
1 cup dates
2 tbsp. PB2 powder
1 tsp. vanilla flavoring
1 tsp. maple flavoring
1 tsp. cinnamon
2 tbsp. water
Preparation
Place all ingredients in a food processor and pulse until smooth. Using a cookie dough scoop, scoop mixture into mini bites. Makes about 18 bites. Store in fridge or freezer.
*Note: May chop dates first with PB2, then nuts. This is a little gentler on the food processor.

Why dates?
Dates are a nutrient-dense food. The nutrion profile surprised me with never-ending list of vitamins and minerals. Pretty cool! I’ve highlighted just a few…
I also have a decadent Cholate-Lovers Date Bite recipe coming soon!
Enjoy!
