Happy Wednesday! Today’s lunch idea is easy, filling and delicious. Although I will be brutally honest, my family was turned off by the smell for dinner the other night, ugh! So things were busy that night with coming and going and I decided it will be my lunch for the following day.

This lunch idea is boasting with lean protein, fiber and high-energy carbs. All very satisfying and kind of like a healthy comfort food that makes you feel so good on a cold winter day.

Here’s the breakdown…

The broccoli and shrimp were made in the air-fryer. I made similar broccoli with this meal following this recipe: Meal Idea: Salmon + Macaroni & Cheese + Roasted Broccoli

FYI, make the broccoli first and then the shrimp (food safety). The shrimp was frozen and medium-sized, peeled and tail off, nothing special.

I defrosted the shrimp from the freezer and placed in a dish towel and pat until dry. Then I just seasoned with a little olive oil and salt and pepper. I only put the shrimp in the air-fryer for 2 to 3 minutes at 400 degrees. I could not believe how quick this cooked!

Here’s the rice I used, feel free to whatever you like! This was easy.

Good carbs provide a wealth of nutrients! And yes, I mentioned fiber keeps the bowels healthy, so important! The average American only consumers about half of the daily recommended amount of fiber. The RDA is 25 to 35 grams of fiber each day. It really does a body good (makes a person feel so much better).
