Yay it is is Friday!  Wow, it’s freezing outside but I do love fall. As I am cozying up with a warm cup of coffee I decided to talk about salads today.   I have come across some nice and easy salad products that help make a quick and healthy meal!  Gotta love ready-to-go vegetables that can be fancied up with some awesome ingredients and you are able to say, “Lunch is ready!”  At my house we like to have a light salad (especially on Sundays because we usually have donuts or pancakes, shhh!) for lunch.

My husband and I really like any Asian salad, yum!  I found this at my local Hy-Vee near the bagged lettuces.  I usually don’t buy bagged lettuce but this caught my eye.  It contains cabbage, carrots, celery, green onions, cilantro, wonton noodles, sliced toasted almonds and sesame ginger dressing.  You sold me with all those ingredients!  I added some leftover shredded chicken (from my crock-pot) to make the salad complete.  It was wonderful!

Nice to have the dressing and toppings all included!

The package serves 3.5 servings.  Here is the nutritional breakdown – 170 calories; 12g fat; 1.5 g saturated; 340 mg sodium; 13 g carbohydrate; 3 g fiber; 3 g protein; 50% vitamin A; 25% vitamin C; 4% calcium; 4% iron.

Here she is, all nice and pretty!  Way to get in your veggies for the day, very yummy!

My next find was Earthbound Farms Organic Power Meal – Tomatillo black bean protein energy

Serving size for the package is ONE! You can eat this entire package! I do not like how they give the nutrition facts and only list sodium content without the dressing, then if you look at the percent of sodium with dressing it is 23%.  Not too bad but don’t be fooled, if you eat the entire package (condiments and all), it is not only 210 mg.  Grrrrrr!

Here is what is inside – tomatillo dressing and a black bean/salsa mixture along with multigrain tortilla chips and sunflower seeds.  The dressing was awesome, I so want it in a bottle.
