I seriously despise the questions, “What’s for dinner tonight?” I don’t know, let me get my magic wand and whip something up for dinner, hmm . . . I ask myself the same question, “What IS for dinner?” Ugh, I so wish I had a magic wand to make dinner, that would just make things so much better, but I don’t so I just make up (which my husband’s loves me to “make up” recipes, not really) a recipe using what I have on hand.
Probably about each week I make up my SUPER SIMPLE shredded chicken in the crock-pot. I use thawed chicken breasts add a little Mrs. Dash seasoning and place in a crock-pot. Place on HIGH for about four hours or place on LOW for six to eight hours. Once chicken is done, take a large spatula and shred chicken.
I like to use Mrs. Dash® Southwest Chipotle seasoning.

This shredded chicken is so awesome to have on hand every week! Plus it is even delicious all by itself with a little barbeque sauce, yum!
So with the leftover chicken I am going to make an easy Buffalo Chicken Pizza!
Use a premade whole wheat pizza crust, or in my case I had leftover whole wheat bread.
Ingredients: whole wheat crust, shredded chicken, ranch dressing, hot/buffaol sauce, shredded cheese, diced tomatoes, diced celery, diced peppers.
Add some hot sauce to the dressing and mix together. Spread that mixture onto crust. Top with chicken and cheese and bake at 375 degrees for 10 minutes.
Now it is time to add the yummy veggie toppings!
Top with diced tomatoes, peppers and a drizzle of dressing and hot sauce. Oh my goodness! This is so delicious!
In the recipe below I listed some of my favorite ingredients such as yogurt dressing, flat bread and hot sauce but today I didn’t have them on hand so I substituted.
Buffalo Chicken Pizza
2 tbsp Bolthouse® Farms Yogurt Ranch Dressing
2 tsp Cookies® Wings-n-Things Hot Sauce
2 Wheat Toufayan® Bakeries Flat Breads or 1 premade whole wheat pizza crust
1 c. shredded chicken, cooked
1/2 c. Colby Jack shredded cheese
(For addition sauce combine more dressing and hot sauce to serve as a topping!)
1/2 cup chopped celery
1/4 cup chopped green and red peppers
1/4 cup chopped tomatoes
1. Combine dressing and hot sauce together in a bowl. Spread mixture on flat bread or pizza crust.
2. Top with chicken and cheese.
3. Bake in oven at 375 degrees for 10 to 12 minutes, or until cheese melts.
I made more of the special sauce (yogurt ranch dressing and hot sauce) and drizzled it on top of the pizza – delish!
