You had me at avocado, right?! My heart is full for anything guacamole, avocados, verde salsa and anything dippy. Anything I can dip a tortilla chip in, ahh . . . I once saw the cutest t-shirt at Target that read, “Chips. Salsa. Repeat.” Why didn’t I buy that when I saw that shirt because that is me at every single meal, ha!
So this recipe is, well, let’s say interesting. And before you say, “Why mess with guacamole?” I totally understand, but this is just an option, not everyday for me, but an option once in awhile. I have added a little chopped broccoli to a simple guacamole for a little boost of nutrients – you might say. I like broccoli most days but I also may get a little bored with the veggie, too. What is green is green and as I do taste a hint of broccoli, I also extremely enjoy guacamole.

Avocados are known as a healthy fat meaning it is high in monounsaturated fats. This type of fat comes from plants and can be easily broken down in the body. Plus, the benefits are huge from lowering LDL (lousy) cholesterol and increasing HDL (healthy) cholesterol. This is extremely beneficial for preventing any type of unwanted heart disease.
Broccoli is also a powerhouse when it comes to nutrition. It is rich in antioxidants including lutein and zeaxanthin that have been shown to be beneficial in preventing oxidative stress and cellular damage in the eyes. Many studies have shown that eating cruciferous veggies may protect against certain types of cancers.
