Celebrate with Berry Mimosas & Berry Spinach Walnut Salad

Hello! Today is National Registered Dietitian Day! I thought you would love to celebrate with me, so I came up with something fantastic…mimosas and a superfood-packed salad that I can’t stop eating.

Salad Ingredients

2 cups spinach

1/2 cup fresh berries

2 tbsps. feta cheese

2 tbsps. red onion, chopped

5 walnuts, roasted (optional)

Dressing Ingredients

1/4 cup olive oil

2 tbsps. red wine vinegar

1 tbsp. sweetener of your choice (I used monk fruit, but could use honey or agave)

1 1/2 tsp. paprika

Dash of salt, optional

Place olive oil, vinegar, sweetener and seasoning in a jar with a lid and shake to combine flavors. Drizzle dressing on salad and enjoy!

In addition to these superfoods, olive oil is a wonderful healthy fat that is a staple in the Mediterranean diet, which has been studied significantly and shown to have many health benefits.

Each one of these ingredients “scream” heart health along with the reducing inflammation and cancers. (I know, interesting choice of words but it’s true 😂).

This salad is so good, it’s panera-good. That’s at the top of the list for me.

Now, crack open the champagne for this delightful sip, berry mimosas! It’s really a sight. 😍

Super simple, just puree one cup frozen (slightly thawed) mixed berries with 1/2 cup water. The frozens berries are the ones with blueberries, blackberries, strawberries and raspberries. We are getting a boost of mega–antioxidants with our champagne. 🤣

Fill wine glass with half purred berries and half champagne.
