Crock-Pot Pumpkin Spice Steel Cut Oatmeal
Hey friends! Nothing is more comforting than warm, yummy food! Here’s a really easy recipe you can throw in the crock-pot and have breakfast for weeks! Plus it’s only 3 ingredients (if you don’t count the water 😉).
This is not only comforting food but good-for-you! Pumpkin puree is loaded with vitamin A, which is essential for eye health. Vitamin A benefits include:
- Building a healthy immune system
- Assist in proper function of the lungs, heart and kidneys
- An important antioxidant, preventing damage from free radicals
Pumpkin is also a good source of fiber and iron! A half cup serving provides 3.5 grams of fiber and 23% of your daily recommended iron needs. Wow!
Steel cuts oats also provide a wealth of nutients, including fiber, protein, iron and potassium. Oats are well-known for helping decrease cholesterol levels and this definitely holds true for steel cut oats. They provide the highest amount of fiber versus other kinds of oats. In (only) a 1/4 cup of dry steel cut oats contain a whopping 4 grams of fiber. Oats are high in soluble fiber that helps “soak up” unwanted cholesterol in the blood stream.
