Crock-Pot Spinach & Artichoke Dip

Hey friends! Tuesdays I generally like to feature a simple snack but since it is a holiday week, here’s a snack pre/post your holiday meal. We are really starting to get ready for holidays here and can’t wait for the season! Who’s with me?!

So…here it is…a super-simple dip that is actually pretty packed with some goodies (super foods!), just saying… I’m all for enjoying all kinds of foods during the holidays but when they are good-for-you AND taste amazing, that’s a pure holiday bonus! 🙌

This seasoning package is from Simply Organic seasonings. Simply Organic Spinach Dip Mix. Sometimes it’s hard to find, but thinking you could sub a ranch dressing seaoning package. I have found it at Hy-Vee HealthMarket and Whole Foods.

Crock-Pot Spinach Artichoke Dip

Ingredients

12oz spinach (I used frozen, thaw and ring out water)

1 can (13.75oz) artichokes, drained

8oz light cream cheese

1 cup nonfat Greek yogurt

1 cup mozzarella & parmesan blend, shredded

1 pkg spinach seasoning

1/2 cup milk

Preparations

Finely chop spinach and artichokes (I placed both ingredients in a food processor). Place all ingredients in a crock-pot and stir together. Heat on LOW for two hours. Serve with crackers, pretzel thins or veggies!

This dip was a hit at my class last week! I’ve been eating it for lunch this past week, and I’m totally counting it as a veggie in my lunch. 🤗
