Valentine’s Day Gift–Fantastic Fruit Salsa!

Happy Valentine’s Day! I hope you all have a wonderful day filled with lots of love and let’s not forget . . . lots of goodies to eat!  As all the chocolate and candy can be maybe a bit overwhelming, I decided to treat others with a simple, light fruit salsa with cinnamon chips!

I found these containers at the dollar store and lined them with wax paper and filled them with a container of fruit salsa and my favorite pita chips, Stacy’s Cinnamon & Sugar Pita chips!  I love that Stacy, a handful of years ago she sent every Stacy (spelled this way) a sample package of her pita chips.  It was addressed, To: Stacy, From: Stacy.  I thought that was the coolest surprise gift.  By the way, Thank You, Ms. Stacy! I am a fan for life!

This salsa is so easy and can be altered with a variety of fruits that you may have on stock.  If you check out the link from last year, I used strawberries, raspberries, pineapple and peaches.  This time around I used kiwi, apples, strawberries and raspberries (Note: The different fruits used in today’s recipes are in parenthesis in the recipe below)

Fantastic Fruit Salsa

Ingredients

1 cup frozen strawberries, thawed

1 cup frozen peaches, thawed (2 kiwis, peeled and diced)

1 cup frozen raspberries, thawed

1 can (8 oz) crushed pineapple (1 apple, diced) (I keep the peeling on! More nutrients and fiber!)

2 packets stevia

1 tbsp honey

Preparation

Place frozen fruit on cutting board and thaw.  Using a bench scrapper, chop thawed fruit into bite-size pieces. In a bowl, add fruit, pineapple, stevia and honey and mix-well.  Chill in refrigerator for at least 30 minutes.  Serve with your favorite chips.
