Hey friends! After the below zero temperatures we have been here today feels like summer with a high of 44 degrees! I am loving it! And today I would like to share one of my favorite recipes ever – My Favorite Party Dip!
And I always have these ingredients on-hand in case of a party appetizer emergency! Black beans, salsa and hummus! I like to think of thisdip as the healthy version of the creamy Velveeta and Rotels® tomatoes, eh?
Place all ingredients in a crock-pot and viola! A super simple dip and sometimes I will admit I even have the leftovers for lunch! Easy as 1-2-3! Packed with antioxidants, fiber and way less fat than any nacho cheese dip! People always ask me, “Is this cheese dip?”
Open can/jar, stir and heat! If you don’t want to wait heating the dip in the crock-pot, just nuke it in the microwave!
Now this recipe has been one of my most popular recipes, seriously! I have taken it to about a million corporate/business presentations and sampled it at a number of my nutrition cooking classes and health fairs, too! I have had people literally stop me or run after me in the parking lot (as I am trying to hurry home) and ask me for the recipe. I have had others leave messages for me on my cell phone wanting the recipe. One time I just got back from doing a presentation at corporate business and right when I stepped into my office I had a call from an employee (who was not a the presentation but had samples of her co-workers dip) dying to know what was in this dip! I even had a group of volunteers at a health fair eat up all the dip (which they really were not suppose to eat but couldn’t resist) think it was chili, hmmm . . . .
There are so many stories about this dip, it is kinda my baby. When I was a new dietitian fresh out of college (years ago!) I was not familiar with many items in the health section and one of those items was hummus. My first taste of hummus was not so good, well, I thought maybe if I added some salsa or something to it, maybe it would taste better? Remind you they did not have those wonderfully whipped hummus dips like they do now. And then I saw a can of black soybeans and decided to add it to the hummus and salsa since it did have a whopping 7 grams of fiber 11 grams of protein! And like that I think I created something fantastic! Note, I did not use black soybeans today, just regular black beans, but go ahead and give them a shot too, Eden Organic makes a great canned black soybeans. My Favorite Party Dip! (Serving size: 1/4 cup)
1 jar Wild Garden traditional hummus
1 jar salsa
1 can black beans, drained and rinsed
Mix hummus, salsa and beans in a crock-pot. Cover and cook on LOW for 4 to 6 hours or on HIGH for 2 hours. Stir and serve with tortilla chips
