Hey! Are you ready to start making all those goodies for the big game? Or in my case, I just wanted to make something a little different for lunch, eh? Sometimes a salad gets so old and I just want something a little different. Usually when my salad looks rough I turn toward carbs, carbs and yes, more carbs! I know . . . I really should eat better but sometimes I just don’t want to . . .enough said, right?! And that is when it is time to get a little creative and try something new! This salsa is a great way to cure those “I-don’t-want-to-eat-my-veggie-blues!”
Speaking of trying something new . . . have you ever tried jicama (ˈhē-kə-mə)? This is a wonderful root vegetable and it is a cross between an apple and a potato. Jicama is wonderful to add on salads or just eat plain! I love, love, love dipping jicama in hummus. Usually I crave tortilla chips or flat pretzels with my hummus but jicama gives a great crunch that marries perfectly with hummus!
My kiddos also love jicama too! I sent this along with my son’s preschool snack and he said most of the kids liked it, except for one kid that spit it out, ha! Well it is always good to try something new, even if they don’t like it. Don’t worry I also sent milk and popcorn so the kids did not go hungry. Right now, this is the only veggie that my daughter will eat in her lunch that I pack on most days. I am sure in a couple weeks the kids will get sick of it and then I will have to something else to fit into the veggie rotation. I love slicing jicama into sticks for the veggie container!
Jicama is super-low in calories! A 1/2 cup serving is only 25 calories, 0 grams fat, 0 milligrams sodium, 6 grams carbohydrates and 3 grams of fiber! Yay, fiber! Plus jicama contains good sources of vitamin C and potassium.
Dice up the sticks and use for the salsa!
Score and scoop out avocado. I will have to say the avocado really makes this a winning salsa! The creamy avocado melts the flavors together in one happy marriage! They were all meant for each other! Plus a great way to get in some superb healthy fats! I totally need more of those healthy fats to help with my dry-winter skin, blah! That is why you don’t see any close-ups!

These peppers are perfect for this fresh, light salsa and I will used the rest on salads (make it a little interesting) and can’t wait to test out a new roasted red pepper homemade hummus! Yum!
Roasted Red Pepper, Avocado & Jicama Salsa
1/2 cup diced jicma
1/2 cup diced avocado
1/3 cup diced roasted red peppers
1 1/2 tbsp grated onion
1/2 tsp garlic powder
1/2 juice of lime
1/4 tsp salt
Combine all ingredients. Recommended for salsa to set for at least 30 minutes for flavors to marry (but if you are like me, I am just a little impatient and dug in right after I made it – it was still delicious!).
