This past week was one of those Sundays where I just wondered what am I going to make for supper? Hmmmm . . . . oh wait that is what I say the majority of the week, sound familiar? Don’t get me wrong, I do like to cook but with three busy kids I would love, love, loooove supper to be magically done, ahhh!
Well, I did find one supper solution that consisted of fish fillets and roasted cauliflower. To me this meal was not very exciting when I first pulled two items out of the freezer, but after I tasted it I was very happy! My first pick would be fresh fish and veggies but when you are in a pinch and want something fast, this meal will work!
Now, if you and/or your family are not huge fish fans (my family is not huge on fish either), I dare you to try a very light, mild fish such as these fish fillets.
I placed them in a foil-lined pan and topped them with a seasoning blend. In my case the only seasoning blend I had in my house was this McCormick’s Rotisserie Chicken seasoning. Oh yeah, and don’t leave the container on the stove when it is hot, you just might burn a hole through the bottom – like I did, yikes!
Next I added a couple tablespoons of lemon juice and topped it with Parmesan cheese. Let the fish bake for 40 minutes at 425 degrees.
While the fish is baking, I placed some frozen cauliflower right beside it. If you do not have enough room then put the cauliflower on the top rack, never put it underneath the fish – always practice proper food safety!
I roasted the cauliflower for about 30 minutes then I took it out and topped it with mozzarella cheese. Place dish back in the oven for another 10 minutes to melt.
Cauliflower was one of those vegetables that I was not a fan of as a kid but as I have grown up, I think it is definitely in my top five favorite vegetables. My kids scarf down fresh cauliflower whenever I have it on-hand. And last week when I visited my daughter for lunch, I was excited to see a huge tub full of fresh cauliflower! Anyway, as you may already know (shhhh!), cauliflower is very good for you! A serving of cauliflower contains only 25 calories! Plus cauliflower it contains nutrients such as vitamin B6, C, K, fiber, folate and more! Some studies have even found cauliflower to stop the growth of certain cancers!
Ahhh . . ..yum, roasted cauliflower and mozzarella cheese is delicious! You gotta try this combo!
Look at how nice the cauliflower and cheese roasted and in about 40 minutes dinner was done! I will have to be honest and say the fish was the star of the show. Super crispy and it looked just like chicken – well . . . that’s what the family thought, heheheee.
By the way . . . remember that Watermelon Slushy I made a couple weeks ago? I froze the rest and popped the ice in my blender and viola! A cool summer refreshing dessert – a huge hit with the kids!
