Easy Peasy Jar Recipes: Chocolate Peanut Butter Fudge & Powered Up Chia Greek Yogurt–Recipe Redux Challenge

HEY! Maybe I had a little too much coffee or I am just excited about a super, super simple recipe(s) I came up with for this month’s theme for Recipe Redux. This month’s theme involves –

Here is this month’s challenge – Raising the Bar on Food in a Jar Ball or Mason jars used to be just for canning – but now they may be more likely used for overnight oats. How do you do food in a jar?

So today I have two little recipes I would like to share: Chocolate Peanut Butter Fudge and Powered Up Chia Greek Yogurt!


This is so much fun and so easy, but first I will talk about my “outside-of-the-box” jar recipe – Chocolate Peanut Butter Fudge in a jar .


I have seen whole chia seeds used in other over-night recipes but I have a bit of a texture issue with using whole seeds so I decided to grind them up in my coffee grinder.  And yes there are some leftover flaxseeds, oops!


Or if you don’t want to grind chia seeds you may buy chia flour.  Remember chia is a great source of omega-3 fatty acids!  Plus they are so versatile that you can sprinkle them onto any food and get a fiber boost!


I started off with 1/4 cup of milk in a baby food jar. I don’t have very many Mason jars on hand so I used an old baby jar but feel free to use to a Mason or Ball jar (they are a little bit more hip!).


Next I added cocoa, PB2, honey and chia.  I let it set overnight and this is what is looks like (on the right)


You could eat it right away and this treat would be more like a pudding but if you leave it set out overnight in the fridge then it becomes thick and more like a fudge! Yum!

Chocolate Peanut Butter Fudge in a Jar (Serves 1)


1/4 cup milk

1 1/2 tbsp cocoa

1 tbsp honey

1 1/2 tbsp PB2

1 1/2 tbsp ground chia


Place all ingredients in a jar.  Seal jar with lid and set overnight.



Now this next recipe is what I call “inside-the-box” type of recipe, not very creative, something you may have seen similar around the web, but it tastes good!


Start off with milk and then add some Chobani Greek strawberry yogurt.


Add some ground chia, vanilla and a dash of cinnamon! Wow, this is a creamy treat perfect for breakfast to get you going in the morning!


Again with this recipe let it set overnight as the chia seeds will bulk up the mixture.  Top with berries or even granola and you have a winner!

Powered-UP Chia Greek Yogurt (Serves 1)


2/3 cup milk

1/2 cup Chobani strawberry Greek yogurt

1/4 cup ground chia seeds

1/4 tsp vanilla

Dash of cinnamon


Place all ingredients in a jar.  Seal jar with lid and set overnight.



By the way remember when I made make-ahead Taco Salads in a jar? Another great way to use a jar and a fool-proof way to eat healthy, eh?  A little bit of planning can make a world of difference when you want to eat good food!
