Ahhhhh, I don’t know what says summer more than a watermelon, eh? I love cutting half way into a fresh ripe watermelon and then let it crack open. And of course right after I cut it, I slice off a nice hunk of watermelon, smack dab in the center, yum! Everyone does this right?
My family and I have been devouring at least one watermelon each week. And besides watermelon, another one of my kids’ favorite treats are slushies. So . . my wheels started to turn and I decided makeover our slushy with this power food, watermelon!
For a serving size of almost two cups (1 3/4 cups to be exact), watermelon is extremely filling for only a whopping 80 calories! This summer-refreshing food is an excellent source of vitamin A and C plus it is loaded with lycopene, a cancer-fighting carotenoid, woohoo! Studies have shown lycopene to help reduce a number of cancers including: prostate, ovarian, cervical, esophageal, oral, pharyngeal, stomach, colorectal, lung and pancreatic.
I really wanted to make this slushy simple and let the watermelon do its wonderful magic! So . .. I used all the juices at the bottom of the watermelon container and put them into ice cube trays. Or in my case I didn’t have any clean trays so I used a cupcake pan. I also need to buy a mesh strainer because I was not able to get out all the seeds, oh well.
Next I dumped those watermelon cubes into my blender with a couple cap-fulls of lemon juice and a couple packets of stevia.
I did add some extra watermelon juice and a tad more ice. Now it is time to blend!
I was thinking next time I should make an adult version of this slushy with some watermelon vodka I have in the cabinet, eh?
This little treat was so refreshing and even the kids gobbled it up! We didn’t finish all this yummy-ness so I froze the rest of the slushy in a pan. Then on the next day I made it into a granita! Granita is just a fancy word for block of (usually fruit) ice shaved with a fork.
2 cups fresh seedless watermelon
2 cup frozen watermelon cubes
3/4 cups watermelon juice
1/2 cup ice cubes
2 tbsp lemon juice
2-3 packets stevia
Blend all ingredients together and enjoy!
