It’s baking day! I decided I wanted a good-for-you cookie to go with my coffee in the morning and something that is a bit more filling, aka stick to my belly so I won’t continue to eat the rest of the morning, eh? I usually do a hearty egg breakfast sandwich or a lovely green smoothie but today I wanted something different!
And here she is . . .
Why not put all my favorite filling breakfast foods into a cookie? Sounds aweeesome! (BTW, can you hear me singing awesome in a stellar opera voice?) These breakfast foods include high fiber Kashi GoLean cereal, raisins, walnuts, chocolate peanut butter whey protein and hearty oats!
The Best Breakfast Cookie (Makes 36 cookies)
3 tbsp butter, softened
1 ripe banana
1 jar baby food, carrots
1/2 cup brown sugar
1 tsp vanilla
1 tsp baking powder
1/2 tsp baking soda
3 cups old fashioned oats
1/2 cup ground flaxseed
1 cup Kashi GoLean cereal
1/2 cup raisins
1/2 cup mini semi sweet chocolate chips
1/3 cup chopped walnuts (optional)
2 scoops chocolate peanut butter whey protein powder
Cream butter, banana, pureed carrots and brown sugar together. Beat in eggs. Stir in vani8lla. Add the rest of the ingredients and combine well. Drop from a spoon onto a greased baking sheet. Bake at 325 degrees for 12 minutes. Remove to wire racks to cool. (These cookies store great in the freezer)
Nutrition facts: 80 calories; 10g carbohydrate; 2 g fiber; 2.5 g fat; 5 g protein
Heck, they make a great breakfast cookie but they are also a wonderful afternoon snack, too!
