Well, this weekend I did Iowa’s largest 20K and I am glad it is over! Let’s just say I am a tad sore and I miss living in a ranch home –the stairs are killing my quads! Anyway, it was a great day to race but I could have used more sleep to really enjoy the race. We will see if I do another long race . . .long runs are so hard to fit into my schedule lately. . . with kids, baby, etc. (Excuses? I know or maybe I am just getting old?)
I did find an awesome muffin recipe that was perfect to eat as I waited to get shuttled to the dam at the crack of dawn, ugh. Coffee . . . muffin . . . I am good to go!
I found this recipe on the side panel of Hy-Vee’s Bran Flake cereal box – thank you Hy-Vee! They were delicious and not too banana-y or bran-y, if you know what I mean.

Add some butter and you have heaven-on-earth! Ahhh . . . Plus one muffin is only 140 calories, 4 grams fat, 2 grams fiber, 9 g sugar and 3 g protein, not too shabby!
After the kids and I picked up my race packet we headed over to the mall (not a good experience) and then to Trader Joe’s. I only make it to TJ’s about every six months and I always find something different. I found new juices, cowboy caviar (awesome but spicy!), spicy soy & flaxseed chips, nacho chips, chocolate covered peanut butter filled pretzels (oh my!) and more!
New green juice! I did drink some green juice during the race, not sure if that was a good thing . . . it tasted yummy, though!
My husband was afraid to try this juice because he thought it looked like dirt. I also bought a container of carrot + orange juice and we both agreed the green plant juice tasted better than the carrot/orange juice! This container was only $3.79!
I want to make popsicles with this the new juices that I bought, maybe the colors will look cool when frozen, eh?
So a fun new recipe and new products to try –a great weekend! I ended the fabulous weekend by watching the new season of the The Next Food Network Star – one of my all-time favorite TV shows, evah! Any other NFNS fans? I will probably watch last night’s episode again because I like the show just that much. I usually do not watch shows over. . .well except when I was a kid and I was obsessed with Full House. How could you not love the Tanner family? Hot dog!
