For some reason this week I just felt like holding off on all laundry, house work and blogging and really just enjoying the time with my kids. We have been playing lots of Wii games and coloring princess posters like crazy (Pssst . . . I have a secret . . . I really like to color! It’s very therapeutic.) Therefore, I have not been too motivated to cook anything fantastic or out of the ordinary. But the other night I bought skinless boneless chicken tenders and I had to come up with something tasty, hmmm . . . “What to make? What to make? What to make” Do you ever say those words? Ha, I say them all the time!
Well, let me say I did a good job of finding something super quick and delicious. Now as you may already know my recipes are nothing fancy but I develop all my recipes on the premise of super-easy – yet yummy and good-for-you! So, say hello to these Crispy Chicken Fingers! This is such an easy recipe and let me remind you I made this while keeping my kids (5-year-old and 2-year-old) involved with a painting project and feeding my baby some new table food. Plus, baby Lucy was tired so later I had hold her while taking pictures of the sauce which may be why the pictures might not be the best, but you get the idea .
Okay, I started with some panko bread crumbs.
A little parmesan cheese to the mix brings the chicken to the next level (cheese always does, right?).
Add any seasoning you would like, in this case I added a Rotisserie Chicken seasoning blend. I also like Mrs. Dash seasonings too.
Now remember I have been talking about golden flaxseed? This is where I also hide it AND no one knows! Just adds a little extra fiber and beneficial omega-3’s. Golden flaxseed blends right in – the perfect color!
Dip raw chicken into the mixture and coat well. Notice that I didn’t even use an egg before – it really didn’t need it. Hooray a step deleted! I love making things easier, short-cuts are my friends!
Here is the other little trick into getting this chicken super crispy – cook on the stove! The panko bread crumbs crisp up so nicely and make the chicken just wonderful.
Brown the chicken tenders on both sides.
I also made a honey mustard dipping sauce. The base is Greek yogurt, honey flavored along with some spicy brown mustard and dijonnaise. This was my first time trying dijonnaise, thanks to Hungry Girl. I really like it and it sure has a kick of flavor.
Honey Mustard Sauce
1/4 cup Greek honey yogurt
1 tsp spicy brown mustard
2 tsp Dijonnaise
1 tsp rice vinegar
1 tsp ketchup
Mix all ingredients together and serve.
Luckily I had all the ingredients/condiments in my frig and pantry, whew! Just a touch of ketchup turn this sauce from yogurt base to yum!
My husband had some buffalo sauce – that would be good too!
Crispy Chicken Fingers
1 lb chicken tenders
1/4 cup panko bread crumbs
1/4 cup Parmesan cheese
1/4 cup golden milled flaxseed
1 tbsp rotisserie chicken seasoning
Preheat a skillet on MEDIUM heat. In a dish, combine bread crumbs, cheese, flaxseed and seasoning together. Dip raw chicken into mixture and coat evenly. Place chicken in hot skillet for 4 to 5 minutes and flip. Cook chicken until golden brown.
Or add the crispy chicken fingers on top of a bed of greens!
There is some Italian dressing on this salad – that is what those little orange things are on the chicken, hehehe.
Even the leftovers were good but then again I am not picky.
This recipe is just a great alternative to premade chicken fingers or nuggets that you buy at the store.
These crispy chicken fingers are easy, homemade, healthy and super quick! A great way to dress up a lean protein, good ole’ chicken.
