Asian Sesame Salad

Ahhh . . .I don’t think I can get tired of this recipe! So fresh and light, I just love it!  Why, you may ask?  Well, I would have to say it satisfies all three part to a perfect salad: crunchy, sweet and savory!

The dressing includes; Omega canola/olive oil, rice vinegar, sesame oil, honey and ginger!

As you can see I am just about out of everything here in the picture including fresh ginger.  I usually keep ginger in the freezer and pulled out a frozen banana and then realized it was not ginger, oops!  So I had to divert to ground ginger.  By the way, ginger is loaded with health benefits from gastrointestinal to anti-inflammatory and even cancer prevention.  When I was pregnant, I never went anywhere without my ginger chew to help the nausea, oh my gosh!  How I so do not miss that feeling, ugh!

The pure sesame oil is really the secret ingredient.

I like to put the all the ingredients for the dressing in an old jar, in this case it was an old chopped garlic (don’t worry it has been washed several times).  Just shut the lid tightly and shake to emulsify the dressing.

Add some shredded chicken and green onions!

Asian Sesame Salad

3 cup shredded coleslaw

1 cup shredded chicken

1/2 cup green onion

1/4 cup sliced almonds

1/4 cup canola/olive oil blend

3 tbsp rice vinegar

1 1/2 tbsp sesame oil

1 tbsp honey

2 tsp ground ginger

Place oil, vinegar, sesame oil, honey and ground ginger in a jar with a lid and shake well.  Place dressing over coleslaw, chicken and onions.  Top with sliced almonds and enjoy!

This is a great way to load up on those veggies and cabbage is an awesome way to perk up a different kind of salad, Asian-style! Make this for lunch and take it on-the-go!
