Wow, can you believe it is Friday already? Where did the week go? Since the week went so fast I did not do a very good job of exercising. You would think I would get enough movement during my day but I think I miss the treadmill because it is pure ME time! I started doing squats with my five-year-old daughter on my back and that is definitely a workout for sure! Maybe I can make up some time this weekend
.
Well, here’s to another week of easy meals. I like this combo of meals because many of the meals are “one-pot dishes”. I was thinking about making some of these ahead and freeze them, hmm . . .

Buffalo Chicken Pizza plus a nice fresh salad on the side!

Enchilada Pie (just skip the meat and add more beans, I forgot it’s Ash Wednsday next week, geez, Easter is early!)
