Wow, can you believe it is Friday already?  Where did the week go?   Since the week went so fast I did not do a very good job of exercising.  You would think I would get enough movement during my day but I think I miss the treadmill because it is pure ME time!   I started doing squats with my five-year-old daughter on my back and that is definitely a workout for sure! Maybe I can make up some time this weekend Smile.

Well, here’s to another week of easy meals.  I like this combo of meals because many of the meals are “one-pot dishes”.  I was thinking about making some of these ahead and freeze them, hmm . . .

 

MONDAY

Buffalo Chicken Pizza plus a nice fresh salad on the side!

TUESDAY

Stuffed Cheesy Peppers & Breadsticks

WEDNESDAY

Enchilada Pie (just skip the meat and add more beans, I forgot it’s Ash Wednsday next week, geez, Easter is early!)

Premade pizza crust or use frozen whole wheat dough

Parmesan cheese
colby jack shredded cheese (2 cups)

cheese slices

Frozen  
Edamame
Frozen whole wheat dough (for breadsticks & pizza crust)
