Halloween Cupcakes (here is my little trick, hahahah!)
I love love this Shrek-green color and do you want to know my little secret? (That is powder sugar on my hand by the way . . .not a weird skin disease.)
Avocados! Who knew avocados could be so versatile? Well, I had to experiment and find out .
For the cake mix I pureed one avocado and added it to one cake mix. If you use a white cake mix, it turns a pale green.
Now you may ask . . .why avocados? Now this cupcake is not necessarily lower in sugar nor a dramatic change in fat, but I am replacing the fat with a healthier fat, like avocados. It is less in calories (about 70 calories less per cupcake)!
Puree avocado with 1/2 cup water or until smooth.
Pureed avocado . . .kind of purdy, doncha think?
Add chocolate cake and mix! Yum, chocolate heaven!
You can even lick the beater without worrying about eating raw eggs!
Now it is time to bake them according to package directions.
All done and ready to ice!
Now for the icing! Puree one avocado with 1/2 cup water again.
Add powder sugar and mix. If you want the icing thinner, just add more water.
I am so in love with the color of the icing. There is no food coloring that can make this gorgeous neon green color . . .its all naturale!

1 cup water, divided
In a a blender, puree avocado with 1/2 cup water until smooth. Combine avocado mixture, cake mix, and 1/2 cup water until well-combined. Bake according to directions on package.

6 cups powder sugar
In a blender, puree avocado with water until smooth. Combine avocado mixture and power sugar until well-combined. If you want your icing thinner, just add more water.
