Even though I do not have to leave my house in a rush every morning and go to work, I STILL don’t have time to eat breakfast. Are you kidding me? How does this happen? The busyness of attending to my children is what life is all about now and I love it! However, I do miss my first 20 minutes of work, sitting down at the computer, checking email and enjoying a little breakfast (and a little me time after the hustle and bustle of the morning). It was usually a cup of coffee or carton of milk and a protein bar, ahhh!
Even though I love my Easy Eggcellent Breakfast Wrap from a few posts ago, I still don’t always have time to do something so simple in the morning. A couple of weekends ago we had my family over and I made some breakfast egg cups in a muffin tin. I ended up with some leftovers and found these to be perfect solution – HAVING SOMETHING READY! I just grab a couple out of the frig and I was good to go for the morning! Again, a little time to plan, makes a world of difference!

So here we go, I had a few minutes after dinner the other night and made my Spintastic Breakfast Cups. Spintastic, because I used an entire package of spinach, it may be a little scary for you but no harm, a great way to get in veggies for the morning! Woohoo!
Start with six egg.
Use my little chopper! Onions and a few sprigs of oregano! Oregano really lasts for quite awhile, yay! I still have a bunch leftover from my Stuffed Cheesy Peppers (those are great as leftovers, too!)!
One box of frozen spinach, thawed. Place in a dish towel and ring out excess water.
Three slices of Canadian bacon, diced.
Looks like my daughter and I need to polish our fingernails again My retro blue/teal is on its way out.
Top with a little extra cheese.
Bake for 11 minutes at 350 degrees.
Please don’t be scared of all the green, once you add the onion, oregano and cheese – it tastes great! Again, what a GREAT way to get in some veggies for the morning!
I am going to come up with a Mexican version of this soon (so you can decide)! These little cups are a great way to get in some filling protein for the morning! I pop a couple in the microwave or just eat them cold AND I’m full!
Spintastic Egg Cups
Ingredients
6 eggs
1 pkg frozen spinach, thawed and drained
3 slices Canadian bacon
1/4 onion, chopped
1 tbsp fresh oregano, chopped
1/4 cup shredded cheese, divided
Preparation
Preheat oven at 350 degrees. Spray a muffin tin with nonstick cooking spray. Scramble eggs and add Canadian bacon, onion, oregano and 2 tablespoons of cheese. Pour egg mixture into each muffin tin. Top mixture with remaining cheese. Bake for 11 minutes or until eggs are firm and cheese is melted.
