Yay, it’s Friday! Where did this week go? So as I have been really trying to get down to business and make that darn scale come back to pre-baby weight I start the day with a filling breakfast full of fiber and protein! I have found a new product that makes my morning breakfast wrap become, yaaawzaaa!
First off, don’t hate me because it is a Walmart brand, it hurts to even say/post but that should tell you something. And let me make my excuse that I rarely . . .RARELY . . . even shop there but I needed to find some things for our new house (that I wasn’t able to find at Target) and if I am out shopping without kids, yes, I am going to make the most of it and also get some groceries! I was walking down the main aisle and this jar totally caught my eye! Peach Pineapple Chipotle Salsa! Ooolaaalaaa! That combination sounded amazing . . . and yes it is very good!
All Natural Peach Pineapple Chipotle Salsa
Even the ingredients are super basic, aka, all ingredients that I can pronounce, love it! This salsa just added that little extra zing to my breakfast wrap. I totally needed a little wowza factor because it was getting boring.
Here are the ingredients for my wrap. Nothing fancy but extremely filling and can be made in just minutes! Getting some protein and fiber in the first part of your day can really help fight off the hunger pangs throughout the morning. If you start your day with a filling breakfast it can start your whole day off right! This wrap contains 18 grams of protein and 7 grams of fiber!
First, I crack one egg into a microwave-safe bowl and mix well. Find a good soup bowl that has a large surface area in order to cook the egg quicker. Place the egg in the microwave for about one minute, depending upon your microwave it may need to be a little over one minute. Next I weigh one-ounce of cheese for topping.
Place cheese on top of cooked egg and put back in the microwave for another 12 to 15 seconds. Add a low-carb tortilla and some salsa for a very filling breakfast! Just a dusting of cilantro to make it look pretty!
Easy Eggcellent Breakfast Wrap
1 LaTortilla Factory Tortilla
2 tbsp salsa
Crack egg into a microwave-safe bowl and put in the microwave for about 1 minute on HIGH. Place cheese on egg and heat for another 15 seconds. Top with your favorite salsa and wrap egg in tortilla. Now you are ready for breakfast!

Yes, this wrap is on the higher side of fat and sodium but I am not too concerned with those numbers because the rest of my day is filled with lots of veggies. I am also leaning on the side of a lower carb diet and finding it is necessary to obtain sodium and fat with this combination. Before I was totally against any low-carb diets but after reading some new books, especially The Art and Science of Low Carb Living, I broadened my horizons to this way of living. The science regarding this diet was really interested and for anyone in this field (dietitians!), I would really recommend reading this book. I am finding that my cravings for my beloved carbs and sugars have been nipped in the butt! Yes, I still have carbs but I have cut way back. Don’t worry I still find time to eat that occasional ice cream cone, too!
