Coo Coo for Coconut Milk – Drink to your health!
I previously blogged about coconut water now you may be hearing more about coconut milk. First what is the difference?
Coconut milk comes from the mature bulk part of the coconut that has a sweet, white consistency. It is rich in oil and sugar.
The oil is rich in medium chain fatty acids (MCFA’s) that have a great amount of health benefits but unlike most fats they are not readily stored but rather used as energy in the body! The majority of the fats in our diet come from long chain fatty acids (LCFA’s) in which are store as fat in our body.
Two essential MCFA’s found in coconut milk are lauric and capric acid which are helpful in supporting the body’s immune system plus contain many healing properties that are involved in research and medicine.
This is just the beginning of the health benefits associated with coconut milk in our American diet while it has been extremely common in other countries.
When I first tried just plain vanilla coconut milk, I didn’t know what to think. I was thinking it was going to be a sweet milk but didn’t find it to be that sweet – it was just ok but maybe something I would get used to. After seeing all the health benefits I wanted to drink it so here is a simple smoothie that is simply quite tasty!
Strawberry Coconut Smoothie
1 cup coconut milk
1 cup strawberries
1 tbsp strawberry protein powder
Blend all ingredients together and enjoy! If the consistency is a little thick for you, just add a bit more coconut milk.
This product above contains a good source of calcium, vitamin A, magnesium and high in vitamin D and B12. It is also soy and dairy free.
