In a previous post I discussed the benefits of this fun little super food – chia seeds!
These little powerful seeds contain heart-healthy omega-3 fatty acids, fiber and more just to name a few. The question is, “How do I add them to my diet?” Very simple – just sprinkle them on just about anything, including ice cream! Unlike flaxseed where you have to grind them, chia seeds uphold their make-up very well and the body is able to break them down.
Chia seeds are able to absorb up to 10 times their weight in water. You can make a chia seed gel by adding 1 tablespoon of chia seeds to 2 tablespoons of water. Some people add this chia gel to beverages but personally I really can’t stand the mouth feel – a little too thick for me.
So, last night I was making a homemade vinaigrette for my salad and thought maybe if I replace the oil with the chia gel, I could make creamy dressy! And come to find out through experiment – it works!
I put 2 tablespoons of chia seeds in about 3 to 4 tablespoons of water. Let it set for a couple of minutes until it thickens (it will absorb fast!). I added the gel mixture to a 1/2 teaspoon of garlic and paprika. Plus 1 teaspoon of honey, mustard and 3 tablespoons of white wine vinegar. I blended this up in my magic bullet. It was a little thick so I added some water and blended again. It definitely was a nice creamy dressing!
Very cool – you can cut down some calories without using as much oil.
