Orange-Glazed Veggies

Serves 4.

Ingredients:

1 tbsp canola oil

¼ small onion, chopped

1 clove garlic, chopped

2 lb frozen mixed vegetables, thawed

1 tbsp soy sauce

1 tbsp 100% frozen orange juice, from concentrate

Preparation:

  1. In a large skillet, add canola oil, onion and garlic.
  2. Add vegetables and sauté.
  3. Add soy sauce and frozen orange juice concentrate.
  4. Cook, stirring occasionally, for an additional 6 minutes or until vegetables are tender.

Nutrition facts per serving: 230 calories, 35g carbohydrate, 6g protein, 7g fat, 0.5g saturated fat, 5g fiber, 0mg cholesterol, 380mg sodium

Sometimes the biggest barrier in getting five servings of vegetables a day is knowing how to make them taste great in a hurry.  A great way to make your veggies taste great without a lot of fuss.
