1 head lettuce, chopped
1 cup reduced-fat shredded taco cheese

All you do:
- Brown diced chicken breasts.
- Add taco seasoning to chicken.
- Into each 100-calorie tortilla chip bag, add chicken, lettuce, cheese and salsa.

Another way to use the pulled chicken recipe from previous post – just omit the taco seasoning and use in the walking taco. Having your meat prepared for a couple of days is such a time saver. I always feel like I am on top of my game when I have the meat portion of the meal already done.
