Walking Tacos

Serves 5.

All you need:

1 lb chicken breasts, diced
1 pkg  dry taco seasoning

5 (100-calorie) tortilla chips, crushed in the bag and top of bag slit open
1 head lettuce, chopped
1 cup  reduced-fat shredded taco cheese
1 cup salsa

All you do:

  1. Brown diced chicken breasts.
  2. Add taco seasoning to chicken.
  3. Into each 100-calorie tortilla chip bag, add chicken, lettuce, cheese and salsa.

Daily nutritional values:

15% vitamin A, 15% vitamin C, 15% calcium, 6% iron

Quick, simple and healthy!  Good food tasting so good!  In this case it is all about portion size.  The 100-calorie mini bags are the proper portion size but sure do make the salad dynamite!  Plus this helps keep you from having an open bag of Doritos and going for more!


Another way to use the pulled chicken recipe from previous post – just omit the taco seasoning and use in the walking taco. Having your meat prepared for a couple of days is such a time saver.  I always feel like I am on top of my game when I have the meat portion of the meal already done.
