Make pancake letters!  Here is a simple recipe that adds extra flavor to your pancakes and notice we are using the Fiber One pancake mix for extra fiber.  I know there are many kids out there that don’t get enough fiber so this is a great way to get some in for the day (excluding my child, who probably gets more than enough, sorry!)


Try a flavor of your choice or add fresh berries to the mix instead of apples – be creative!

Apple Pie Pancakes

1 cup Fiber One® pancake mix

2/3 cup water

½ cup  apple pie filling

  1. In a large bowl, stir together all ingredients.
  2. Place batter in a snack-size plastic bag. Push all batter to one end and cut a small opening on the edge of the bag.
  3. Heat a lightly oiled griddle over medium-high heat. Squirt pancake batter into the shape of a letter of your choice. Cook until bubbles form in the cake and bottom is golden brown. Flip. Cook the other side until golden.
