1 lb 99%-lean ground chicken
½ tbsp Mrs. Dash™ Southwest chipotle seasoning
1/3 cup canned pumpkin
4 hamburger buns
4 each of lettuce leaves, tomato slices and onion slices
1. In a bowl, combine chicken, seasoning and pumpkin. Form into 4 patties.
2. Grill patties, uncovered, over medium heat, approximately 14 to 18 minutes or until internal temperature reaches160º F, turning once.
3. Toast buns on grill for 1-2 minutes, or until golden brown.
4. Top each burger with 1 lettuce leaf, tomato slice and onion slice. Serve on toasted buns.

Look at this rock star burger – can you believe you can get 100% vitamin A in this little guy?! Ok, personally I prefer beef flavor over ground chicken flavor BUT in this case we save a lot of fat by using 99% lean ground chicken. And this burger tastes wonderful! Remember beef is fine in moderation and lean (10 gm fat or less) – plus we gain lots of good nutrients such as iron from beef!
The pumpkin make this burger nice and juicy plus it has lots of flavor – the slight sweetness from the pumpkin and the spicy from the seasoning – a match made in heaven!
