Asian Beef Stir-Fry

Serves 4.

1 tbsp vegetable oil

2 cups cubed beef tenderloin

1 tbsp flour
1 can low-sodium beef broth
3 tbsp soy sauce
1 tsp garlic powder

1 pkg (16 oz) frozen  stir-fry mix, thawed

1.Heat oil in a large skillet over medium-high heat.

2.Add beef tenderloin cubes, cook till done.

3.Once beef is cooked, push beef to edge of the pan and add flour in the center.

4.Whisk in broth, soy sauce and garlic powder.

5.Add thawed stir-fry vegetable mix and stir-fry until tender-crisp.

6.Heat to a quick boil.

7.Immediately reduce heat.

8.Stir and cook until heated through.

I always like stir-fry but could never make it just right like the take-out version – well here is a great recipe to try.

So simple you can have stir-fry in just minutes!  If you really want to load up on your veggies, you can even add an extra back of stir-fry veggies.   This is very filling for not that many calories, good source of fiber and high in protein! WOW!  Way to get your iron for the day from the beef!  I have used the “beef stew” meat – much cheaper and already cut in the package – it may be a little tougher so throw a little lemon juice on it to break it down and tenderize it.
