Try Something New – Spaghetti Squash

This is spaghetti squash – so many good nutrients for you but how do you cook it?




Here is how I make a super simple spaghetti squash.

Since it is very hard to cut I pop it in the microwave for a little bit.  Slice little slits into the squash to serve as little air vents.  Throw in the microwave for 5 to 7 minutes until the skin of the squash is a little soft.   Then slice it length-wise and scoop out the seeds.  Place both sides face down in a baking dish with about a 1/4 cup of water.   Microwave for about 10 to 15 minutes.  Then you are able to take a fork and scrap the squash and pull out strains of “spaghetti.”

Top it with some marinara sauce and parmesan cheese – yummy!


This is very good and very filling – you can eats lots for very little calories but also get a ton of vitamin A, C, fiber and many more!


Dinner can be made in 20 minutes or less – plus you will get a ton of  “spaghetti” out of one little squash to feed the family!
