Chipotle Chicken

I really love having the meat portion of my meal made when I get home from work, aahhh – feels like all the work is done.  Here is another great tip to give old-boring-chicken some flavor!

Similar to the past post Crock-pot chicken, you can add a little flavor this time around.


Chipotle Chicken

2 lbs. boneless skinless chicken breasts (I used frozen and did not thaw)

1/2 package chipotle seasoning mix (you can also use a marinade mix)

3 tbsp brown sugar

Put all ingredients in the crock-pot on low for 6 to 8 hours or on high for 4 to 5 hours.


Here is the seasoning packet that I used and it is low in sodium! It was found by the chili beans. 



I have also used this mix as well.


Now to top it off and make it even better add this mixture below to each little pulled chicken sandwich – yummy!


4 avocados

1 lime

1/8 teaspoon cayenne pepper


Mash together avocados, squeeze in lime juice and add cayenne pepper.


This is absolutely wonderful – I will share my round 2 recipes using the same chipotle chicken later!
