Simple Spinach & Egg Quiche Cups

All you need:
8 eggs
½ cup diced  ham
½ pkg (10 oz) frozen spinach, thawed and drained
1 cup  shredded Colby Jack cheese, divided

1. Preheat oven to 350 degrees.
2. Spray a 12-cup muffin tin with nonstick cooking spray.
3. Scramble eggs and add ham and spinach.
4. Pour egg mixture into muffin tin.
5. Top mixture in each tin with cheese.
6. Bake for 10 to 15 minutes.

Nutrition facts per serving: 310 calories, 3g carbohydrate, 25g protein, 21g fat, 9g saturated fat, 0g fiber,
470mg cholesterol, 380mg sodium

This was the perfect breakfast this weekend and even great for leftovers.  I put them in the fridge and have been having them in the morning warmed up.  Get a great amount of protein to start off your day!  Putting them in a cup cake or muffin tin makes the perfect portion size.  The ham gives the spinach the perfect amount of salt.  You don’t even know you are eating spinach!
