So it was about 5:45 p.m. and I was thinking, wow I should really make something for dinner, hmm . . . what should I make? What food do I have? I was not very motivated to make food last night but I did have half pound of 99% lean ground chicken breast. What to do with that? Ooh, whole wheat pre-made pizza crusts! Pizza sounds yummy!
I decided to make taco pizza and one of my main goals was to decrease the sodium content. There is so much sodium in Mexican food with the seasoning, cheese, sauces and tortillas! You would be amazed! I opted not to use a taco seasoning packet (which I didn’t have anyway) and come up with some seasonings on my own. When using super-lean ground chicken it is extremely important to season the meat very well because it is so lean.

1/2 lb 99% ground chicken breast
1 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1 teaspoon Worcestershire sauce
1/4 cup canned garlic and olive oil seasoned tomatoes, undrained (use some of the juices to moisten the meat!)
1/2 cup of pinto beans, drained and rinsed
1/4 cup canned garlic and olive oil seasoned tomatoes
In a food processor, combine all ingredients until smooth.
1 (100% whole wheat) pre-baked pizza crust
1 cup shredded cheese
crushed tortilla chips
Preheat oven to 375 degrees.
In a skillet, combine chicken, chili powder, paprika, garlic powder, Worcestershire sauce and seasoned tomatoes. Simmer all ingredient until meat is thoroughly cooked.
In a food processor, combine beans and tomatoes until smooth.
On a 100% whole wheat pre-baked pizza crust, spread a thin layer of bean mixture. Top with seasoned ground chicken and sprinkle with cheese.
Bake in the oven for about 10 to 15 minutes or until crust is golden brown. Cut into 8 slices and top with shredded lettuce, tomatoes and chips.
When my husband asked if it was good, I said, “It is actually very good!” I impressed myself – considering the night before I used a bit too much seasonings and lemon zest. Yeah, it is a winner and it was pretty simple to make!
