Summer is just around the corner and I have the perfect recipe for a summer-fun treat!

Pineapple Sherbet

Serves 6 Source: Stacy Mitchell, RD, LD,


1 can (20-oz) crushed pineapple with juice

2 cups frozen raspberries, thawed (or any berries)

1 quart low fat buttermilk


Combine all ingredients and place in a blender or food processor. Puree until smooth.

Pour into a freezer-safe dish and place in the freezer. Freeze until firm, at least 2 hours. Eat and enjoy

The color of this recipe is gorgeous and it is all from the fruit – all natural!  The buttermilk gives it a great texture like ice cream!  Super simple and super yummy!  Plus you also get antioxidants from the berries and a good source (30%) of calcium from the low-fat buttermilk!  WOW – much better than ice cream which is only 10%.  Can’t be beat!
