Sweet & Sour Chicken Recipe

I always love looking at recipes in magazines, books, TV, etc!  It gives me great ideas for my creations!  I always look at the recipe and think “how can I make it healthier?” and “how can I make it easier.”


Here is a super simple recipe to make in just minutes!



2 tsp canola oil

1 1/2 cups brown instant rice

1 1/2 cups water

1/2 can (20-oz) crushed pineapple, undrained

1 bag frozen stir-fry vegetables

2 cloves garlic, crushed

2 tsps soy sauce

1 1/2 cups shredded cooked chicken



In a skillet, coat pan with oil.  Add rice, water, pineapple, vegetables and garlic.  Let simmer till vegetables and rice are tender for 8 to 10 minutes.  Add chicken and heat for the last two minutes.  Top with soy sauce and serve.


Most recipes use a sweet and sour sauce but the pineapple adds the perfect amount of natural sweetness without adding extra sugar.  It is definitely a winner!  (you can use your shredded chicken from yesterday’s tip Time-Saving Crock-Pot Chicken)
