Yes, we all know that we need to eat more veggies but I know it can be hard some days. Yesterday was an extremely busy day on top of being tired and I am ashamed to say my best source was coming from the sauce on the slice of pizza I had for lunch – yikes! So, how do you make it easier to eat veggies?
Any type of pizza is always a winner – here is a simple recipe I like to make to help me eat more veggies!
Taco Veggie Pizza
Serves 2. Source: Stacy Mitchell, RD, LD,
2 whole grain tortillas
1 tsp olive oil
1 (17 oz) container Greek yogurt (if you want to use an 6-oz container just add a tbsp of seasoning or try Mrs. Dash Southwest Chipotle for low sodium!)
1 pkg reduced-sodium taco seasoning
1 tomato, chopped, divided
1 c. chopped broccoli, divided
1 c. shredded lettuce, divided
¼ c. shredded taco cheese, divided
¼ c. taco sauce or salsa, optional
All you do:
- Preheat oven to 350 degrees.
- Place two tortillas on baking sheet. Drizzle olive oil on both tortillas. Bake for 5-10 minutes or until crisp.
- Mix together yogurt and taco seasoning. Save any remaining dip in the refrigerator for fresh veggies!
- Spread yogurt mixture onto tortillas.
- Top with vegetables, shredded cheese and taco sauce or salsa.

35% vitamin A, 80% vitamin C, 20% calcium, 15% iron
Nutrition information per serving:
280 calories, 11 g fat, 4g saturated fat, 0g trans fat, 15 mg cholesterol, 660 mg sodium, 33 g carbohydrates, 5g fiber, 4g sugar, 8g protein.

I also buy the pre-packaged cut broccoli, cauliflower and carrots from Dole. They come in little bags – perfect size so you don’t have to throw any away. I have found them on sale for only 3/$5 – that is a great deal especially when you don’t have to chop anything. Just rough chop the veggies and throw on this pizza recipe!
Also if you tend to throw your veggies away – check out the salad bar section of the store. I have found little snack size baggies with veggies for only 50 cents!
